Masters-Level Courses

This certificate may be of interest to any nutrition and health professional advising on lifestyle and behavior, including RDNs, nurses, doctors or pharmacists. Completion of all four courses earns a certificate and digital badge. Dates for Fall 2023 are September 6-December 22, 2023. Dates for Spring 2024 are January 22-May 5, 2024. A prerequisite for admission is a bachelor's degree from an accredited institution.

RDN's may be eligible for continuing education credits under CDR's academic coursework category (category 100). Please reference CDR's Professional Development Portfolio Guide for details.

Medical Nutrition Therapy I: An Integrative & Functional Approach

This course explores the theory and application of nutrition assessment and counseling skills needed to provide personalized nutrition to diverse clients and patients. It also addresses issues relevant to professional practice including professional ethics and self-care.

Micronutrient Metabolism Across the Lifespan

Vitamins and minerals (micronutrients) are essential for normal development, health, and disease prevention throughout the life span. This course examines the biochemical roles of specific micronutrients in normal developmental physiology from pregnancy through late adulthood, and their role in disease prevention and pathophysiology.

Medical Nutrition Therapy II: An Integrative & Functional Approach

This course builds on the foundational tools learned in Medical Nutrition Therapy I and explores how food and nutrition may be used as medicine to prevent, treat and heal disease. Areas of focus include gastrointestinal diseases, enteral and parenteral nutrition, cardiovascular disease, liver disease and cancer.

Nutrigenomics & Advanced Nutrient Metabolism

Spring 2024

3 Credits

This course examines several biochemical pathways associated with diet and lifestyle related diseases, with emphasis on the role of nutrition in modulating these pathways and disease risk. Nutrigenomics, oxidation/antioxidants, eicosanoid and inflammation mechanisms, and diet and cancer are covered.

Optional Immersive Experience

Learners will have the option of participating in an immersive Culinary Medicine Workshop in Fall 2023. More details to follow.

To enroll in the Nutrition and Integrated Health Graduate Certificate program, you must meet the following admission requirements.

  • Bachelor's degree from a regionally accredited institution.
  • 3.0 grade point average. Applicants with a GPA of less than 3.0 may be considered for provisional admission

Debra Pearson, Ph.D., is the director of the Master’s Program in Nutrition and Integrative Health at UW-Green Bay. Her students remark about her depth of knowledge and ability to make complex topics more understandable. In addition to her work at UW-Green Bay, Debra Pearson has been sought by the Medical College of Wisconsin to teach a number of nutrition courses to medical students. Her work here is an important part of increasing the nutrition knowledge of physicians, while also bolstering the role of the dietitian in interdepartmental care.

Sara Wagner is the director of the undergraduate dietetics program at the University of Wisconsin Green Bay, where she teaches courses in integrative medical nutrition therapy and food preparation and service. She is a resource for practicing dietitians and students alike, encouraging them to elevate the role of the nutrition professional by providing nutrition care using the best available research and evidence.  Sara Wagner has experience as a professional educator, speaker, and counselor, and has been honored with the Wisconsin Young Dietitian of the Year Award, UW-Green Bay Early Career Teaching Award, and Margene Wagstaff Fellowship for Dietetics Education.
